Mango Avocado Salsa on Baked Salmon

Mango Avocado Salsa on Baked Salmon

Salsa recipe:
1 cup chopped mango
1 avocado, chopped
1/8 cup of chopped cilantro, I guesstimate on this one.
1/8 – 1/4 cup chopped red onion, to taste
1 lime juiced
Sea salt and pepper to taste.
Serves 3-4 depending on how much you want on your fish.

Salmon:
3-4 wild caught salmon filets
Season the salmon with 1 lemon, juiced and 1/2 an orange, juiced. Marinate in the juice for 15-20 minutes while your oven is preheating to 450. Sprinkle some season on the salmon, I like a blend of garlic, sea salt, pepper, red pepper flakes, and thyme. Bake your salmon, skin side down, in a clear and shallow baking dish at 450 for 12 minutes.

Green Beans
Trim the ends and place in a pot of water on medium heat. Bring the water to a boil and boil for only 3-4 minutes. Transfer your green beans, not the water, to a skillet. Add 1 teaspoon of coconut oil and season to your taste with your favorite clean seasoning.

21 Day Fix:
1 red, 1 green, 1/2 purple, 1 blue
