1 Pound of Shrimp
1 Lime Juiced, plus zest
1/2 Jalapeno, chopped
1/2 cup Cilantro, coarsely chopped
1 garlic clove, minced
1 tablespoon olive oil
Remove tails and clean and de-vein shrimp. Marinate in all of the above for at least 30 minutes.
After marinated, skewer the shrimp and cook on a grill or grill pan for 3 minutes on each side or until shrimp are thoroughly pink.
21 Day Fix:
1 Red
1 tsp
As a dinner, this dish pairs well with
Cilantro Lime Quinoa and
Black Bean and Corn Salsa.
