Springtime Kale and Steak Salad

While on a farm tour with my daughter, I picked up some fresh produce, spring mix salad, dinosaur kale, and arugula. So naturally I had to make this yummy-ness (totally a word) for dinner! 




Spring mix
Kale
Steak
Blue cheese 
Red onion
Mushrooms
Balsamic vinaigrette 

First, separate the kale from its ribs. 


Toss the salad together with chopped red onion and chopped mushroom. Add your dressing and refrigerate for about 45 minutes until the leaves wilt a tiny bit. 

If you want to make your own: 

3/4 cup olive oil
1/4 cup balsamic vinegar
1 tablespoon of honey (or more)
1-2 cloves of minced garlic
Sprinkle of sea salt and cracked pepper

You will have extra! You just want to drizzle your salad. 

Next, marinate your steak in some balsamic and fresh spices for about 30 minutes at room temperature. I used extra lean flank steak, but any lean steak will do! 


After marinating, coat the steak with a small amount of olive oil and add it to a HOT skillet to pan sear it. For a thin steak, you only need to cook about 4:6 minutes each side, flipping every 2 minutes. 

Alice the steak, add the blue cheese to the salad, and you can add some crunchy kale chips to the salad as well for a great texture!
