Crock Pot Baked Potato Soup


Hey guys! I usually post only CLEAN foods... but I was having a serious craving for Baked Potato soup! I even went to Panera last Friday, JUST for soup, and guess what, Baked Potato soup is not served on ONE day of the week, and that day is Friday! Ugh! So I decided that it's not going to be totally clean and healthy, BUT it's homemade and not full of chemicals, so that's a win!

8 Yukon gold or russet potatoes
1 Large white onion
5-6 strips of bacon
1 14 ounce can of chicken broth

1 12 ounce can of evaporated milk
1/3 cup of wheat flour
2 Tbs butter

1 cup shredded cheddar cheese
1 cup of sour cream or plain greek yogurt

Garnishes of choice!


Wash and peel potatoes and then cut into small chunks.
Peel the onion and cut that into small chunks as well.
Cook the bacon and, you guess it, cut into chunks! Reserve some for the garnish at the end.
Add the potato, onion, and bacon into the crock pot with 1 can of chicken broth and 1/2 cup of water. Set your slow cooker to low and 6 hours. You'll want the potatoes to be soft.

After the time expires, make a roux from the butter, flour and evaporated milk. If you're going for taste rather than health, you can use some of the leftover bacon grease in your roux. To make the roux, use butter and bacon grease, warm it up and add the flour, whisk well. Then gradually add the evaporated milk, stirring occasionally. It's going to take less than 5 minutes before it gets REALLY thick. That's how you want it! Then, use a potato masher to mash up some of the potatoes and add the roux then mix.

Finally, you'll add your cheddar cheese, sour cream or greek yogurt, and then mix it well and serve! Top with any garnishes you like, cheese, bacon crumbles, onion, etc! Enjoy, it's SO GOOD!

Cilantro Lime Chicken


This crock pot recipe rocks! It can serve as a summer meal with the cilantro and lime kick, or as a comforting fall meal with the yummy gravy sauce that smothers the chicken. Absolutely wonderful, I hope you enjoy!

Ingredients:
3-4 Chicken Breasts
1 can low sodium chicken broth
1 large sweet onion
4-5 limes
1 cup cilantro
¼ cup wheat flour
Chili powder, cumin, 2 minced garlic cloves, sea salt
avocado

Directions:
Season chicken with spices and add to the crock pot. Chop onion and layer
around the chicken.

Next, pour 1 cup of chicken broth into the crock pot.

Juice 4 limes into the crock pot. Set to low for 4 hours for defrosted chicken.

When finished cooking, remove chicken and set aside. Add the flour to the crock
pot and chop about ½ cup of cilantro. Whisk well and turn the crock pot to high for
about 20 minutes for the sauce to thicken.

Top the chicken with the sauce and garnish with cilantro and sliced avocado.

I serve with Cilantro lime quinoa and black beans.

Chicken Sliders


Chicken sliders, two ways! 

For the buffalo chicken sliders: 

Place 4-5 chicken breast in a slow cooker. Cover with Franks red hot sauce and 1-2 tsp of dried thyme. 


Cook on low for 6 hours or high for 3-4 hours. Shred with a fork. 


For the BBQ sliders: 

Cook exactly the same but with BBQ sauce and no thyme. 

I served mine with Blue Cheese Slaw on a whole wheat slider size roll. 

Delish! And perfect for party food.

Roast Beef Sandwich

Roast of choice, I use a Chuck Roast and strip the fat off the meat after cooked. I do this by hand so that I get it all. Sorry, not fun, but necessary.
Spices of choice, garlic, onion powder, sea salt, pepper at a minimum.
Whole wheat bread roll
Mushrooms
Sweet Onion
Cheese (I like swiss, muenster, or provolone)


Place frozen roast in a large crock pot. Add 1/2-1 cup of water and season the meat. Set the crock pot on low for 6 hours.

Once finished, stir the roast to break it apart, and strip off any fats.

Saute mushrooms and sweet onion in coconut oil. Set oven to 350.

Cut open your bread roll and make individual sandwich size pieces. Add meat, onions, mushrooms, and cheese to the sandwich and cook for 5 minutes in the oven, just until the cheese is melted.



21 Day Fix:
2 yellow
1 red
1 blue
1/2 green

Serve with salad to get more greens!

Shredded Beef Tacos

This easy crock pot recipe will have you feeling like Taco Tuesday on any day of the week!

Clean salsa
Whole wheat or corn tortillas
Garnishes of choice, cheese, avocado, lettuce, tomato, onion, plain greek yogurt pretending to be sour cream.

Place defrosted roast in a large crock pot. Add 1/2-1 cup of clean salsa over the top. Set the crock pot on low for 6-7 hours.

Once finished, stir the roast to break it apart, strip off any fats, and mix the salsa together.


Add your meat to your tortilla and garnish as desired! How easy was that?


21 Day Fix:
1 red of meat
1 yellow for each 6 inch whole wheat tortilla
1/2 green for salsa
Be sure to count your blue for avocado and cheese
And green for lettuce, tomato, onion if used.

Slow Cooker Oatmeal

Slow cooker Banana Oatmeal


INGREDIENTS
1 cup steel cut oats
1 and 1/2 ripe banana - mashed
2 cups unsweetened vanilla almond milk
2 cups water
2 tablespoons Chia Seeds
1- 2 teaspoons cinnamon depending on your taste
1 teaspoon vanilla
½ teaspoon nutmeg
½ teaspoon salt
Optional garnishes- banana slices, walnuts, slivered almonds, honey or pure maple syrup

INSTRUCTIONS
1. Combine all ingredients in your slow cooker and mix very well.
2. Cook overnight on Low for 7-8 hours.
3. In the morning, stir oatmeal well
4. Serve warm with banana slices, chopped or slivered nuts, a drizzle of honey or pure maple syrup or a pinch of brown or coconut sugar if you wish.

NOTES: This is really difficult to clean up! For easier clean-up and to avoid crusty residue inside your slow cooker, use a liner or place all ingredients in a glass bowl that fits into the slow cooker then add enough water to fill the lower half of the slow cooker. Cover and cook on low for 6 to 8 hours.

Clean Eating Chicken Fajitas- Crock Pot Meal

Delicious, clean, easy!



Drizzle 1 tablespoon of olive oil in the bottom of your crock pot and 2 teaspoons of real butter.

Layer the chopped peppers first, I used orange and red but whichever colors you prefer. Then add sliced onions on top.

Add chicken next, setting it right on top of the peppers/onion. I used 3 breasts to serve 4.

Season the chicken with Fajita seasoning (1 tablespoon chili powder, 2 tsp ground cumin, 2 tsp garlic powder, 1/2 tsp cayenne pepper, sprinkle of sea salt and cracked pepper). Add 1/3 cup of clean salsa right on top of the chicken. Set the slow cooker to low and cook for 5 hours for defrosted chicken, 7 for frozen chicken. Stir chicken to shred it and then use whole wheat (or your favorite) tortillas, cheese, plain greek yogurt masquerading as sour cream, avocado, tomatoes, etc as garnish! Seriously YUM.

21 Day Fix

Measure fajita mixture in a green container and count it as 1 1/2 red, 1 green (I'm being generous here for your peppers/onions/salsa), 1 teaspoon. And each 6 inch tortilla counts as one yellow. You can also serve over rice or lettuce. Measure your garnishes in your containers.
