Chicken Parmesan with Zoodles

Do you Zoodle?!? !


Chicken Parmesan with Zoodles

2 chicken breasts
2-3 Zucchini
1/2 cup panko
1/4 cup wheat flour
1/4 cup Parmesan cheese
1-2 tablespoons Italian seasoning
1 egg
Marinara sauce
Olive oil
1 garlic clove
Pink Himalayan or sea salt

First, slice chicken breast into thin strips. Mix the panko, flour, Italian seasoning and cheese in a shallow bowl. In a separate bowl, beat the egg. Dredge the chicken first in the egg wash and then evenly coat with panko mixture.

Heat olive oil in a skillet and fry the chicken breast for 5 minutes on each side until golden brown. You can also bake it, but we like it super crispy!

Spiralize the zucchini. Toss zucchini in 1 tbsp of olive oil and season with diced garlic clove and a dash of salt. Cook in a skillet for just a couple minutes, stirring frequently.

Use a clean spaghetti or marinara sauce. We use Victoria White Linen marinara sauce. Top the chicken and zoodles in warmed sauce and garnish with Parmesan if desired. Enjoy!

Motivation Monday!


1. Set a CLEAR goal.
Set your goal, make it reasonable but challenging, and write it down! Make it known that this is your goal. If your goal involves weight loss, for example, be clear and concise: “My goal is to lose 10 pounds by December 30th.” Boom, clear, concise, time sensitive. I won’t take credit for this, I heard it somewhere else but it stuck with me: Your goals should be SMART… specific, measurable, attainable, realistic and timely (S.M.A.R.T.)
2. PLAN ahead.
Once you have your goal, you really need to devise a plan of attack. How do you plan to reach this goal? Which tools will you use, which benchmarks for success will you set for yourself, how are you going to get there?
3. Be CONSISTENT
You need to be prepared for set backs. It’s going to happen. So plan for consistency, not perfection. Goal reaching is consistency over time. You need to be consistent, for a long period of time, to reach a big goal. Life happens! Live it, enjoy it, you only get one! 😍
4. Go ALL IN.
This goal you set needs to be forefront in your life. It’s not on the backburner. It’s there, every day, consistently, and you are totally devoted to it. Yes, you’ll have set backs, but winners don’t quit. Be all in.
5. Have a support system.
Not only for support but for accountability. These people may not be people you even know. Reach out to others who have the same goals as you. If it's fitness, surround yourself with fit friends, people who are striving for the same thing. If it's business, surround yourself with people who empower you. Your support system is going to be the secret sauce!

Flawsome


Well, I did not want to press play this morning. I hardly slept, I'm tired, my house is a mess, we have a play date this afternoon so I really need to get it cleaned now, and I have just 40 minutes because my son has been sleeping awful due to teething, so my regular 90 minute nap break has totally been slashed! But you know what, I deserve this! This is MY time to make ME better.
So, workout done! And looky there, I had fun!
Don't ever forget that you're awesome, despite any flaws you may have. Those flaws make you human, make you real, and make you unique.

Tip for Tuesday!

Tip for Tuesday!

I'm trying something new today... typically I get up and shower in the morning and get ready before we head off to school. Today, got up, put on gym clothes, laced up my shoes, hair in a bun and shades on! Dropped off Bella as a hot mess! My effort is to be ready for my workout the minute Nixon goes to sleep, instead of ready for the day and then I put the workout off because I'm dressed, showered, hair done and makeup on.
This goes against the grain for me. I don't ever leave the house not being "ready." I believe my mama is responsible! Back in the day, it was popular to wear sweats to school. Oh no way, not in my house. Mama says no pajamas to school, get up and get ready! She's relaxed a bit, I see my little sis in some sweats now and again.

And yes, we always need some cute meme on the workout apparel!

New Workout

You may not have a fancy gym in your house, or the space to really spread out, you may not have equipment, and you may not have TIME! But neither do I! The best thing is, YOU DON'T NEED ANY OF THE ABOVE!


I did my workout this afternoon while my daughter was home, my baby was napping, in between work from home, being a stay at home mom, and I did it from the bedroom that my two children share! Under 30 minutes, total body workout!

I'm so super uncoordinated, and this was Day 1 of this program for me. So if I look confused, it's cause I am! But I'll get better every time I press play! The important thing is, I DID IT. And it was FUN πŸ‘ŒπŸ»

1. Start the day with prayer or meditation. Give thanks to God for all you have, reflect on the day ahead, ask Him for guidance today.
2. Take care of yourself! Spend some time on your personal development and health, 'cause you can't pour from an empty cup.
3. Cultivate relationships with those around you, even your children.
4. Reflect on what you have done, not what you need to do. Give yourself credit!
