My little one, who for the last 3 years has been running on fumes and has never touched chicken, has finally decided that she likes to eat food! Hallelujah! Her special request, chicken, mashed potatoes, and broccoli. Your wish is my command little girl!
Chicken marinated in lemon juice and spices
Place 2 chicken breasts in a shallow baking dish. Coat them with 1 tsp of coconut oil and the juice of half a lemon. Add your favorite clean chicken seasoning (I like Everyday Seasoning from Trader Joes) and sprinkle with 1 tsp of thyme (that's the secret sauce!!)
Bake at 375 for about 35 minutes until the juices run clear.
Toss broccoli, a small squeeze of lemon, 1 tsp of olive oil, 1 tsp garlic, sprinkle of sea salt, and a sprinkle of pepper in a mixing bowl. Spread the broccoli in a single layer on a cookie sheet. Cook at 425 for about 20-25 minutes, until the broccoli starts to get brown and crispy. Season with a sprinkle of parmesan cheese if desired.
Mashed potatoes. Chop 2 large russet potatoes into cubes and place into water. Boil until soft. Drain the water. Add 3/4 cup plain greek yogurt, 1 tsp real butter, 1/4 cup grated cheddar cheese, salt and pepper to taste, 2 cloves minced garlic, and 1 tbsp almond milk. Mash with a potato masher or hand mixer. Taste... adjust accordingly! I'm Italian, I'm sorry folks, we are great cooks but not great measurers! Is that a word? Yes, I think so.
And there you have it, a traditional dinner, prepared in a clean way!
