Cookie Dough Bites Recipe:
1 15 oz can of chickpeas
1/2 cup peanut butter
2 tbsp honey
1 tsp vanilla extract
pinch of sea salt
First, drain and rinse the chickpeas in a colander until they are no longer "foamy," Then add all ingredients except the chocolate chips to a food processor and blend until creamy. Be patient, it takes a few minutes! If you use a blender, like I did, you'll need to add a small amount of almond milk and be VERY patient. Food processor is best but I don't have one.
Allow to cool and then stir in chocolate chips and chill until ready to eat! Keeps a couple days in the fridge.
