Slow Cooker Oatmeal

Slow cooker Banana Oatmeal

1 cup steel cut oats
1 and 1/2 ripe banana - mashed
2 cups unsweetened vanilla almond milk
2 cups water
2 tablespoons Chia Seeds
1- 2 teaspoons cinnamon depending on your taste
1 teaspoon vanilla
½ teaspoon nutmeg
½ teaspoon salt
Optional garnishes- banana slices, walnuts, slivered almonds, honey or pure maple syrup

1. Combine all ingredients in your slow cooker and mix very well.
2. Cook overnight on Low for 7-8 hours.
3. In the morning, stir oatmeal well
4. Serve warm with banana slices, chopped or slivered nuts, a drizzle of honey or pure maple syrup or a pinch of brown or coconut sugar if you wish.

NOTES: This is really difficult to clean up! For easier clean-up and to avoid crusty residue inside your slow cooker, use a liner or place all ingredients in a glass bowl that fits into the slow cooker then add enough water to fill the lower half of the slow cooker. Cover and cook on low for 6 to 8 hours.
