Spinach and Cheese Stuffed Chicken

Saute 2 cups of spinach in coconut oil, just until the leaves start to cook down.

In a mixing bowl, add 1/2 cup of ricotta, 1/4 cup of feta cheese, 1 egg, 1 tablespoon almond meal or whole wheat bread crumbs, cooked spinach, and garlic, nutmeg, and pepper to taste (about 1 tsp of each). Mix well.

Butterfly 4 chicken breasts
Spoon some of the mixture into each and wrap the chicken around it. Sprinkle a small amount of almond meal, breadcrumbs, or panko onto the top of the chicken. If there is any of the cheese mixture left, just add it to the top. Cook on 375 for 20-25 minutes, until chicken is cooked. Add 1 cup of clean red sauce of choice to the top, cook for 5 additional minutes to warm the sauce.

1/2 green
1 yellow
1/2 purple
