This is a family favorite!
2 Chicken Breasts, cooked and chopped
1-2 cups of broccoli, steamed
1/2 cup shredded cheddar cheese
1 cup plain greek yogurt (you can also sub ricotta cheese)
1 cup eggs or egg whites, whichever you prefer
1 whole wheat pie crust
Preheat over to 400. Season chicken how you prefer, cook and shred. Steam Broccoli.
In a large mixing bowl, combine yogurt, eggs, and cheese, mix well, it will be lumpy. You want 2-2 1/2 cups of this mixture. Add a tablespoon of your favorite seasoning. I use Everyday Seasoning from Trader Joe's.
Spread out your pie crust in an 8x8 round pan or pie tin. Add the broccoli and the chicken and spread out evenly. Next, add your filling mixture and make sure that it gets down deep into the bottom of the dish, covering everything and mixing through.
Bake on 400 (or 350-375 if your oven runs hot) for 45-60 minutes depending on the size of pan you've chosen. The top with be golden brown and a fork will come out clean, it shouldn't jiggle.
Slice into 8 even slices.
