Grilled chicken and Bruschetta

Grilled Chicken and Bruschetta

Serves 1, multiply for family size.
1/3 cup chopped white or yellow onion
2/3 cup chopped tomatoes
Chopped basil to taste
4 oz grilled chicken breast
Balsamic vinegar
Lemon juice
thyme, sea salt, pepper
1 tsp olive oil
Field Greens


1. Chop tomatoes and onion and mix in a bowl with chopped basil to your taste. Add balsamic vinegar to cover tomatoes and one tsp olive oil. Mix well. Cover and place in refrigerator for at least one hour. It is really best to leave it overnight, so if you're meal prepping, this is a good one to prep in advance.
2. Grill or bake your chicken, season with lemon juice and thyme, sea salt and pepper as it cooks.
3. Place chicken over a bed or field greens and top with tomato mixture.
