Shrimp Ceviche
21 day fix approved!
Serves 6 as appetizer.
1 pound of shrimp
1/2 large red onion
1 medium tomato
1 ripe avocado
2 garlic cloves, minced
Cilantro, sea salt, tapatio sauce to taste
Juice of 1 lime
Cook shrimp, chill, and dice. Dice all vegetables, except avocado. Combine all ingredients in a mixing bowl. I used about 2 tsp of tapatio, but you can adjust it for more or less spicy. I used about 1/4 cup cilantro, and 1 tsp sea salt, but again, adjust those to your taste.
Chill for at least 30 minutes, then dice avocado and mix well.
For 21 day fix, serve yourself a green container size serving and count as 1 red, 1/2 green, 1 blue.
